    My sweet bride bought me this cookbook on Oahu and gave it to me in an attempt to mollify my grumpitude at having been left home while she and her sisters frolicked in Hawai'i. I have not one but two musubi presses in my pantry and she knew full well that I would enjoy and use this musubi cookbook. The concept of musubi sounds exotic but is no more complex than the concept of a sandwich. It meets many of the same needs: portability, eaten-from-the-hand, uses up leftovers. The concept of musubi sounds exotic but is no more complex than the concept of a sandwich. It meets many of the same needs: portability, eaten-from-the-hand, uses up leftovers. At bottom, musubi is something nummie surrounded by rice held together with a wrapper of nori (dried seaweed). The authors do not recommend seasoning the rice in the traditional sushi manner (with rice-wine vinegar, salt and white sugar); this is all a matter of taste. One is not better than the other. Knowing both is essential. The recipes of are three sorts: classic near-sushi combinations; innovative likely-to-try combinations; and whacko, absurd, make-only-when-overconsuming-alcohol combinations. Of the first sort: Broiled Eel (Unagi) Musubi, Crab-and-Shrimp Cake Musubi, Hanama'ulu Chicken Musubi, and Miso Salmon Musubi. Of the second sort: Bacon-and-Egg Musubi, Bulgoki Musubi, Honey Teri-Glazed Tofu Musubi, Kalua Pork Musubi, and Portuguese Sausage Musubi. Of the third sort: Cheeseburger Musubi, Egg Salad Musubi, French Toast Musubi, Ham and Cheese Musubi, Shoyu Hot Dog Musubi, Philly Cheese Steak Musubi, and Vienna Sausage Musubi. One of the authors. Tom Kowach, "invented" a musubi press and created a company called Ko Craft to produce and sell his Mo Bettah Musubi Maker. It is given its own page in the book. He also mentions devices, one of which is made by Hormel, with which SPAM can be cut into nine perfectly proportioned slices per can. SPAM musubi is like the mother of all musubis. Musubi making is a better entry into to the world of Hawaiian cooking than is, for example, making sushi or sashimi. It takes years of practice to become proficient at sushi and sashimi. All it takes to make adequate musubi is one of Tom's presses and one of Hormel's slicers.

    nonfiction/cookery contains a brief history of musubi (O-musubi) and tons of cooking and prep tips for making and safely storing/rewarming your own creations. Having only known the spam kind (delicious but not something my doctor would want me to eat regularly), I am thrilled to see all the ways in which people have taken advantage of the construction techniques to create their own versions of the tasty lunch or appetizer treats. Full-color photos of delicious musubi (or its ingredient nonfiction/cookery contains a brief history of musubi (O-musubi) and tons of cooking and prep tips for making and safely storing/rewarming your own creations. Having only known the spam kind (delicious but not something my doctor would want me to eat regularly), I am thrilled to see all the ways in which people have taken advantage of the construction techniques to create their own versions of the tasty lunch or appetizer treats. Full-color photos of delicious musubi (or its ingredients) accompany most of the recipes, and there is enough variety in here (cheeseburger musubi! chili bowl musubi! kimchi musubi! fried rice musubi! egg salad musubi!) to inspire you to grab some nori, start a fresh pot of rice, and get to work with anything and everything in your fridge and pantry (do peanut butter and jelly go with rice? probably!). If you are a beginner or even a practiced musubi-chef, I *highly* recommend you check this book out. It is recommended that you purchase some sort of musubi-forming device (to get your fillings in a neat rectangle shape before you wrap with the nori, shiny-side out), but it is possible to make them using only your hands (they just won't look as uniform and will have a more rounded shape to them), or you could even experiment with using the fillings to make smaller sushi rolls (if you've got a mat/plastic wrap handy).
