    I've been a vegetarian for about 20 years. My husband prefers lots of meat and cheese with his meals. I'm always in search of quick and easy vegetarian recipes that he'll eat, which is like looking for that proverbial needle in the haystack. I didn't have a lot of hope with this book, since it's vegan, which is even more limited for his tastes. I'm thrilled to say the few recipes I've made from this book so far have been a huge hit with both of us! I like using the slow cooker. I can get I've been a vegetarian for about 20 years. I can get everything chopped and put together in the early morning. If I know I'll be busy in the morning, I can chop the veggies and get things ready the night before. Then, at the end of the day, the meal is ready and there is no work to be done. The recipes are fairly simple. The only time-consuming part is the chopping of vegetables. Only a small percentage of the recipes have accompanying photos. While the photos are always nice, mainly because it's a quick and tempting visual, I don't find them necessary. *I received a free review copy from the publisher.*

    I am not a vegan but I love to eat meatless meals. I love soups and pasta without meat. I also love to use my slow cooker for anything from soups to rice puddings. The Super Easy Vegan Slow Cooker Cookbook by Toni Okamoto Has 100+ recipes that are ready when you are. There are basics such as Beans, marinara sauce, vegetable broth, roasted vegetables, and fruit compote. The recipes, for the most part, has minimal prep work. Easy to follow recipes from newbie to experienced cook. There are a range I am not a vegan but I love to eat meatless meals. I love soups and pasta without meat. I also love to use my slow cooker for anything from soups to rice puddings. The Super Easy Vegan Slow Cooker Cookbook by Toni Okamoto Has 100+ recipes that are ready when you are. There are basics such as Beans, marinara sauce, vegetable broth, roasted vegetables, and fruit compote. The recipes, for the most part, has minimal prep work. Easy to follow recipes from newbie to experienced cook. There are a range of vegan dishes as well as salad recommendations to go along with your dish. There is also a section at the back of the book for staples such as Pesto, Salsa, Chutney along with others. I hope to get a lot of use out this cookbook and if you are a vegan looking for easy recipes in the slow cooker, give this book a shot!

    Holy cow am I obsessed with this book. I'm a lazy cook anyways so I'm a huge fan of slow cooker recipes. Just as the title promises this book is SUPER EASY, there are a few recipes tat call for a few steps that are in addition to throwing food in a crock pot, but most of these recipes are straight up throwing stuff in a crock pot. And as a vegetarian, I can also add cheese to any of these recipes. Holla! Some divine recipes include: sweet potato chili, peanut sauce roasted veggies, baked potato Holy cow am I obsessed with this book. I'm a lazy cook anyways so I'm a huge fan of slow cooker recipes. My only beef (ha ha) is that there aren't a whole lot of pictures, other than that I have NO complaints!

    I would not recommend this cookbook for a new vegan. We tried several recipes and had to add either Bragg’s Liquid Aminos or cheese sauce.

    I count my slow cooker as one of my best investments and to prove that point I am always looking for new recipes. This book, while I am not a vegan personally, included a lot of new recipes for my slow cooker. I do not eat a lot of meat and also try to stay away from cheese, so I often cook vegan recipes just because they fit the bill of no meat and no cheese. I love how this book introduces you to recipes that are healthy, cost conscious and easy to prepare. Lots of soups and stews, which in my I count my slow cooker as one of my best investments and to prove that point I am always looking for new recipes. This book, while I am not a vegan personally, included a lot of new recipes for my slow cooker. I do not eat a lot of meat and also try to stay away from cheese, so I often cook vegan recipes just because they fit the bill of no meat and no cheese. I love how this book introduces you to recipes that are healthy, cost conscious and easy to prepare. Lots of soups and stews, which in my house is a typical winter recipe list. So this book was perfect when it was cold or just rainy outside and I needed comfort food. If you like exotic dishes, such as curries, or are interested in protein rich dishes, but are on a budget, give this book a try. Grains in stews or soups are a great way to fill you up and adding beans as a protein source is not only tasty, but also saves you often money compared to a traditional meat dish. I found this book to have easy to follow recipes that did not require a lot of specialized ingredients. I prefer pantry items in recipes since I know I will use up whatever I buy before the expiration date. I can highly recommend this book to anyone that loves a slow cooker, wants to cook healthy meals and has to stay on a budget. If any one or all three of these fit your bill, then this book is for you! I received a free copy of the book from the publisher.

    This book contains some very good and easy vegan recipes; we enjoyed the basic bean chili, especially, and plan to make it, varying the vegetables as suggested, many times in the future. I am being generous, however, by not docking the book more than one star for containing several recipes that are not made in the slow cooker. Okamoto has a website that is dedicated to frugal vegan cooking, not just slow cooking, and I wonder if she found it difficult to resist padding her slow cooker book with This book contains some very good and easy vegan recipes; we enjoyed the basic bean chili, especially, and plan to make it, varying the vegetables as suggested, many times in the future. I am being generous, however, by not docking the book more than one star for containing several recipes that are not made in the slow cooker. Okamoto has a website that is dedicated to frugal vegan cooking, not just slow cooking, and I wonder if she found it difficult to resist padding her slow cooker book with non-slow cooker recipes.     Vegan Slow Cooker Cookbook There are a lot of recipes here. Not all of these recipes are slow cooker recipes. Also there are many recipes in here that require making another recipe from this book as an ingredient in them. This might not be a problem for some people. I, however, only have one slow cooker and use it to save time. It would defeat my purposes to have to use the slow cooker for 6-8 hours to make a garlic sauce that is an ingredient needed in a main dish that I will have to also cook Vegan Slow Cooker Cookbook There are a lot of recipes here. Not all of these recipes are slow cooker recipes. Also there are many recipes in here that require making another recipe from this book as an ingredient in them. This might not be a problem for some people. I, however, only have one slow cooker and use it to save time.     I wish this cook book had more pictures! There are a few good ones in this book, but I prefer when I can see how each recipe should look when it's done. Some of these recipes are pretty basic, I was surprised to see so many salad recipes and things that were Mexican or Indian 'inspired'. Overall I wasn't wowed, but there is a variety of recipes.

    Super easy and super good We switched from Keto diet to plant based and I no longer knew what to cook. The recipes in this cookbook are super easy to prep and the ingredients easy to find in the store. My husband grew up on southern cooking and he absolutely loves every dish from this cookbook.

    The title says it all. I don't have a slow cooker, but I like to look at vegetarian/vegan books because I would like to be convinced to want/need one. This one definitely had some recipes I'd try. Overall the recipes are super simple and straightforward with very few "extra" steps beyond throwing everything in the cooker. I also liked the tips/tricks offered at the bottom of many of the recipes.

    This is a great book for vegans--however, it's NOT so great for *diabetic* vegans. Almost every recipe was very carb heavy, and none of the nutritional information so kindly provided included carbs, so you even have to figure that out for yourself.

I have not been so lucky to get food as low as $50/month, spend up to $500/month for me, and a relative may eat on it, but got it to $250/month for one. I plan to practice eating vegan-vegetarian, meaning if no vegan option, then vegetarian. I will see if there are any recipes I can eat. Most look pretty good but unsure about aluminum foil in slow cooker for seven hours. I'll try the creamy potatoe soup, Brussel sprout one, and another one since I have most of the ingredients. Some pics are a little advertising and may be good. I'm pleased so far with recipes I've tried, didn't have to tweak it by adding more seasonings, wasn't bland or so bad that had to trash it and waste ⌚ and 💵. I would have liked to have an idea how long to storage foods either in freezer or fridge. Baked beans, good Brussel spout soup bit curry and a little spicy for my tastes and acid reflux, so remove Serrano Chile. Creamy potatoe soup good with unsweetened vanilla coconut 🥛 Feel well broth surprisingly easy and tasty, then followed with 🤮 day soup, good. Had Thai rice noodles to add, good without too Very more to try but happy with it so far.

    I truly enjoyed this cookbook. I wish, as I usually do, that there was a photo of every recipe. This helps to see how the dish "should" appear upon completion. I made the quinoa breakfast and the spicy tomato stew and both where delicious. I plan on making another dish from this cookbook this weekend.
